Strawberry Coconut Bird Cake
Your bird is going to love this very special Bird Cake!
Ingredients:
1 package of your favorite Bird Bread Mix
2 large eggs
1 and 1/3 cup water
2 tablespoons olive oil or Red Palm Oil
One 5 ounce size package of unsweetened flaked or shredded coconut
1 large container of fresh strawberries
One round, or heart-shaped, pan for baking.
Step 1. Wash strawberries and cut stems and set aside. (Remove any strawberry leaves before serving to your bird)
Step 2. In a large mixing bowl add a package of Bird Bread mix, eggs, oil, 1/2 cup coconut flakes, and water, then mix all ingredients until well blended.
Step 3. Pour mixture into a lightly sprayed or oiled cake pan and bake at 375 for approximately 40 minutes. Ovens vary so check for doneness with a toothpick or butter knife. When it comes out clean after being inserted into the cake, it is ready.
Step 4. Allow the cake to cool slightly on a cake rack or plate.
Final Step 5. While the cake is still warm to the touch, take the remaining coconut and begin applying gently to the sides and top of the cake. Press into sides of cake lightly. Once coconut decorates the cake, add the whole strawberries or strawberry slices to decorate as you wish.
Makes a yummy tropical fruit bird cake for any size bird or parrot. Cake can also be frozen in serving size baggies or containers for daily use if you wish. I often make this special cake as a Birdie Valentine Cake.
